Pumpkin cranberry whole grain french toast...the taste of fall!

Pumpkin cranberry whole grain french toast...
On weekends I like to make Lou a nice breakfast, this morning I tried a twist on his normal french toast.
He loved it..
Recipe is for one...just double it for more..
1 large egg
1 large egg white
1/4 cup of pumpkin puree ( not pumpkin pie mix)
splash of unsweetened vanilla almond milk
pinch of salt
pinch of pumpkin pie spice mix
pinch of cinnamon
teaspoon of unsalted raw pumpkin seeds
a few cranberries for topping 
1 teaspoon of coconut oil
2-3 pieces of Whole grain cranberry bread (usually this time of year your grocery stores bakery will have this available...if not look in the package bread area...just watch for trans fat..

In a small bowl whip the egg and egg white together
Add the pumpkin puree and almond milk..... stir together
Add the salt, pumpkin pie mix and cinnamon...stir
Coat your bread well with mixture by soaking each piece ...allowing it to absorb some of the mixture.
In a pan melt coconut oil
Place your coated bread into the pan and cook ...careful not to burn...:))
When done....stack each piece putting just a dab of butter ( I use a product called MELT made with coconut oil)
sprinkle with pumpkin seeds and cranberries 
I used 1 tablespoon of real maple syrup over the top.
Enjoy!
Lou thought these were a great alternative to regular french toast...I think I'll try something with pancakes next..

Healthy Ice Cream....

Healthy Ice Cream

I love ice as much as the next person does...but we all know it is not a healthy snack...
So... why not make our own :))
There are many recipes out there ...I have tweaked it to my liking..
The recipe:
One frozen banana (sliced, always peel your banana before freezing)
3 ice cubes made from light coconut milk ( from the can, make sure they are frozen before making)
Throw both in a food processor ( blender will not do)
Process until the consistency of soft serve ice cream ( no lumps)
Throw a few chocolate chips in the shoot just before done
(If you need help with this I have a video called "who needs the ice cream man") 
Put in a nice serving dish ( or not)
top with a FEW chocolate chips
A tasty healthy ice cream..
I have more recipes that I will share for ice cream if I get enough response.

Banana Coconut Hot Oats...they don't have to be boring!!

Creamy Banana Coconut Hot oats...
I am not a fan of Oatmeal...but when you dress it up (in a healthy way) it is delicious...
I hope you will try this yummy recipe
1/3 cup of Oats
1/3 cup coconut water
2/3 cup of  unsweetened Coconut milk 
1/2 ripe banana 
1 Tablespoon Chia seeds
pinch of salt
1 teaspoon vanilla
In a pan mix oats, coconut water and milk
While waiting for mixture to boil...take half of the halved banana and mince it
when mixture starts to boil add the minced banana
with a whisk whip mixture...(constantly)
add the chia seeds and vanilla (continue to cook and stir for remaining time..5 minutes)
place in a pretty bowl...:))
add toppings...
1 Tablespoon almond butter
shaved unsweetened coconut 
raw cacao
 the rest of the banana..
These Oats will not be thick...the banana gives them a creamy texture!

According to "my fitness pal"...this has about 400 calories (good calories)
I believe breakfast is the most important meal of the day.
I also like to eat the majority of my calories early....I burn them off throughout the day!
Of course you can cut the calories by using a 1/2 T of Almond butter, using water instead of coconut water...

Kids will love this...Lou loves them too!
